“Food is Medicine,” said Nadine Grzeskowiak, Gluten Free RN and author of Dough Nation. It is even medicine at tailgate parties! Grzeskowiak shared her menu for a healthy tailgate party at the Greater Corvallis Rotary Club meeting Friday, Sept. 12, as Rotarians prepare for the home opening Oregon State football game on Sept. 17. Grzeskowiak’s menu calls for grilled steak, corn on the cob or a good stew cooked in a crock pot.
The Gluten Free RN told her story of being diagnosed with Celiac Disease and how she overcame her condition and improved her health by committing to a gluten-free diet. “We are really lucky to live in Oregon where we have an abundance of fresh food,” she said. “I like food that’s local,” encouraging all to choose bacon, avocados and coconut oil. Kettle Chips, salsa, humus, Hail Mary treats, and Epic bars are among the foods she recommends.
“In our world today, eating must be convenient,” she explained, noting that people don’t have time to labor over a stove. But she commits that preparing food can be easy by grilling a steak and adding a salad. Grzeskowiak even promised a new locally brewed gluten-free beer that is brewed out of Portland as a good alternative for tailgate parties.
Grzeskowiak has published her first book, Dough Nation, about her celiac disease experiences and food solutions.
